You can set your emails to go out at a specific time and date.  For example, you may be working late in the evening, but want your email to go out during business hours the next day.  In your project create an email either as new, from a template or open a draft email, then click on 'Send Later':

When you click on 'Send Later' you can schedule the email to go out at a future time and date: 

Choose the date and time you'd like the email to go out and click on schedule, your email will go out at that time.  If you want your email to go out at a time other than the top or bottom of the hour you can type in the exact time:!

Please note that if you go back and edit the email, (like to add a CC), then save it, it will override the scheduled settings, you'll have to schedule the email again.
